Introduction
This takes a bit of effort, but it really is spectacular.ย Theย Ricottaย is spot-on, and you can make it the day before, seal, and refrigerate to save time.ย Feel free to use whichever pasta sauce you prefer, including theย Bologneseย orย Vodkaย sauce.ย This should make 12-14 crepes, depending on how large you make them.
Total Time: 1ยฝ to 2 hours (not counting the cheese)
Instructions
โข Make the Ricotta cheese and transfer to a large bowl or container.
โข Thaw the spinach either by leaving out for a few hours or by microwaving on low level for a few minutes. Once thawed, mix the spinach with the cheese, parsley, and black pepper. Cover and refrigerate until ready.
โข Preheat the oven to 350ยฐF.
โข Mix the crepe ingredients together in a bowl and whisk very well so that there are no lumps.
โขย Heat a medium non-stick pan or skillet (9 or 10 inch) under medium heat.ย We do NOT want to use butter or non-stick spray, as these will affect the size and shape of our crepes.
โขย Using a ladle, transfer a little less than a ladle-full (about ยพ cup) of the batter into the hot pan, and tilt the pan around so that the batter coats the entire pan in a circle.ย You should be left with a thin circle of batter in the pan.ย (it may take a couple tries to get a feel for how to do this)
โขย Let the crepe cook for a few minutes or until the underside starts to brown a little.ย Then, using a very thin spatula, flip the crepe and continue to cook for a few more minutes or until the other side starts to brown.
โข When the crepe is done, remove it from the pan and place it on a sheet of wax or parchment paper to cool. Repeat until all the batter has been used. Do NOT stack the crepes on top of each other on the paper; keep them separate so they donโt stick to each other.
โขย Spread about ยฝ of a jar (about 1 cup) of the pasta sauce on the bottom of a large baking dish (I use a 10ร15 inch, but you can also squeeze into a 9ร13).ย This will help keep the crepes from sticking.ย (if using Bolognese, coat the bottom with butter or a non-stick spray instead of spreading the sauce).
โขย Spoon about ยฝ cup of the filling into a crepe and roll the crepe tight.ย The easiest way to do this is to place the filling a little off-center, then wrap the shorter side of the crepe over the top of the filling and tucking it underneath the filling.ย Keep rolling through to the longer side.
โข Place the rolled crepe into the baking dish. Repeat until all of the crepes have been used.
โขย Spread the remaining sauce on the top of the crepes.ย Bake for 30-45 minutes or until bubbly.
