Spinach & Artichoke Dip

Introduction
One of my personal favorites! I bring this to parties and tailgates all the time, and not a single person has ever guessed it’s vegan. It still has all the cheesy and delectable goodness. Plus, it’s actually really simple to make (the ricotta takes a little bit of time, but you can also make that early and refrigerate).
I love spreading this dip over some sliced French bread, but you can also use crackers, tortilla chips, or even roll it up inside a flour tortilla. Feeling bold? Just go to town with a spoon!

Ingredients
1 Ricotta cheese recipe
8 oz. sour cream
14 oz. jar of artichokes, drained
10 oz. frozen spinach
1 Tbsp. garlic, minced (~2 cloves)
1 tsp. salt
1 tsp. black pepper
Instructions
โขย Defrost the spinach and drain the liquid. Press down on the spinach a little, too, to make sure most of the liquid has drained.
โขย Make the ricotta cheese. Set aside when done.
โขย Preheat the oven to 350ยฐF.
โขย In a large bowl, combine the ricotta, sour cream, salt, and black pepper.
โขย In a food processor, add the spinach, artichokes, and garlic. Pulse a handful of times to break up the pieces and mix.
โขย Add the spinach/artichokes to the bowl with the cheese and cream. Mix very well.
โขย Transfer the contents to an oven-safe serving dish (I use an 8 x 8 inch baking dish).
โขย Bake for 25 – 30 minutes, or until the top starts to brown.
