โ€ขย  In a large pot or soup pot, heat a couple Tbsp. of olive oil over med-high heat. Add the carrots, onion, and celery and sautรฉ until the onions start to become translucent, stirring regularly.
โ€ขย  Add the garlic and continue to sautรฉ for another minute or two.
โ€ขย  Add the tomato paste, oregano, and thyme. Sautรฉ for another minute to let the flavors release.
โ€ขย  Add all the remaining ingredients (except the pasta and zucchini) and stir together. Bring to a simmer.
โ€ขย  Simmer the soup for at least 30 minutes (longer is fine), stirring occasionally.
โ€ขย  While the soup is simmering, start to heat another large pot of water for the pasta. Cook the pasta according to package instructions.
โ€ขย  About 10 minutes before serving, add the zucchini to the soup and mix it in. Continue to simmer.
โ€ขย  Prior to serving, remove the bay leaves.
โ€ขย  To serve, place some pasta in a bowl and then ladle the soup on top.
โ€ขย  If you’re planning on leftovers, I recommend storing the pasta and the soup separately. The pasta will continue to absorb the liquid if they are kept mixed together.
