Minestrone

Introduction
Kind of like spaghetti and meatballs, Minestrone soup is an Italian staple. Savory and flavorful, the soup can be served as an appetizer or side dish or it can be the main event because it is pretty filling. I like to use cannellini beans, but you can substitute in your favorite, if you’d like. I also like a small pasta, like ditalini, so that you can get a little bit of everything in each bite. And fire roasted diced tomatoes help to add an extra layer of flavor, too.
We’ll go 50:50 on the veggie broth and water so that the broth doesn’t overpower the herbs, but you only need to do that if you’re using our vegetable broth; store-bought broth isn’t as good, so you can use a full 8 cups of broth if you’re taking the shortcut.
Don’t forget the garlic bread!

Ingredients
2 carrots, peeled and diced
2 celery ribs, diced
1 yellow onion, diced
1 zucchini, peeled and diced
4 cups vegetable broth
4 cups water
28 oz. diced tomatoes
2 15 oz. cans beans
1 lb. pasta
6 oz. tomato paste
ยฝ cup red wine
3 Tbsp. garlic, minced (about 6 cloves)
2 bay leaves
1ยฝ Tbsp. dry oregano
1ยฝ Tbsp. dry thyme
2 tsp. lemon juice
1 tsp. salt
ยฝ tsp. red pepper flakes
ยฝ tsp. black pepper
Olive oil
Optional:
Green beans
Spinach
Yellow Squash (instead of zucchini)
Instructions
โขย In a large pot or soup pot, heat a couple Tbsp. of olive oil over med-high heat. Add the carrots, onion, and celery and sautรฉ until the onions start to become translucent, stirring regularly.
โขย Add the garlic and continue to sautรฉ for another minute or two.
โขย Add the tomato paste, oregano, and thyme. Sautรฉ for another minute to let the flavors release.
โขย Add all the remaining ingredients (except the pasta and zucchini) and stir together. Bring to a simmer.
โขย Simmer the soup for at least 30 minutes (longer is fine), stirring occasionally.
โขย While the soup is simmering, start to heat another large pot of water for the pasta. Cook the pasta according to package instructions.
โขย About 10 minutes before serving, add the zucchini to the soup and mix it in. Continue to simmer.
โขย Prior to serving, remove the bay leaves.
โขย To serve, place some pasta in a bowl and then ladle the soup on top.
โขย If you’re planning on leftovers, I recommend storing the pasta and the soup separately. The pasta will continue to absorb the liquid if they are kept mixed together.
