Chicken Noodle Soup

Introduction
All the down-home flavors but vegan. Guaranteed to warm you up on a cold day. For the pasta, try something smaller, like a fusilli, orecchiette, or even an orzo; the idea is to be able to get everything together in one spoonful.
Total Time: 1 to 1ยฝ hours
Ingredients
1 yellow onion, diced
3 carrots, peeled and diced
6 cups vegetable broth
2 cups water
2 celery ribs, diced
1ยฝ lbs. chicken
3 Tbsp. nutritional yeast
2 bay leaves
3 tsp. fresh thyme, minced (about 1ยฝ tsp. dry)
3 Tbsp. fresh parsley (about 1ยฝ Tbsp. dry)
2 Tbsp. garlic, minced (about 4 cloves)
1 tsp. salt
1 tsp. black pepper
1 lb. pasta
Olive oil
Donโt want the chicken? Substitute in 2 โ 15oz. cans of cannellini beans.
Instructions
โข In a soup pot, heat a couple Tbsp. of olive oil over med-high heat and sautรฉ the onions, carrots, and celery until the onion starts to become translucent, stirring regularly.
โข Add the garlic, nutritional yeast, and thyme and continue to sautรฉ for another couple of minutes.
โข Add all other ingredients (except for the pasta) and simmer for 30 โ 45 minutes, covered.
โขย Around 30 minutes prior to serving, start boiling a pot of water for the pasta. Cook the pasta according to package instructions.
โขย When the pasta is done, add some pasta to a bowl and then ladle in the soup on top.
โขย Discard the bay leaves prior to serving.
โขย Store any leftover pasta and soup separately. Otherwise, the pasta will absorb all the liquid.
