Tomato & White Bean Stew

Introduction

Hearty and delicious, this soup warms the soul on a cold day.  I like to add pasta to my soup, but if youโ€™re watching carbs feel free to leave that out.  If using pasta, smaller pastas work best to keep everything bite-sized.  You can also substitute your favorite beans.  I like to use cannellini, white navy, and butter beans.

โ€ข  In a soup pot, sautรฉ the onions and celery with a few Tbsp. of olive oil over med-high heat until the onions become translucent, stirring regularly.

โ€ข  Add the garlic, paprika, and cumin and continue to sautรฉ for another 2-3 minutes.

โ€ข  Add all remaining ingredients (except the pasta) and simmer, covered, for 30 minutes.

โ€ขย  Around 30 minutes prior to serving, start boiling a pot of water for the pasta. Cook the pasta according to package instructions.ย 

โ€ขย  When everything is done, place some pasta in the bottom of a bowl and then ladle in some soup. Add any additional toppings.
โ€ขย  Store any leftover pasta and soup separately. Otherwise, the pasta will absorb all the liquid.
