Introduction

In my personal opinion, Chinese food makes THE BEST leftovers. You don’t lose a ton of the flavor or consistency re-heating. This recipe is no different – the savory sauce, the crispy tofu, the delectable sautรฉed veggies… Everything is just as amazing 2 days later.
I also find Chinese food to be very versatile – you can mix and max and find your favorite combinations of ingredients and flavors. While I love all the included veggies in this recipe, feel free to add some snow peas, water chestnuts, bean sprouts… Whatever you’d like! You can also find your favorite noodles – I personally love Udon noodles.
And speaking of noodles… Traditional lo mein noodles are made with egg. But grocery stores often have vegan lo mein noodle options to choose from. I very much prefer the not-cooked noodles, too. I’ve found the pre-cooked varieties tend to be a little dryer and more brittle. But use what you’d like!
This recipe does get a little complicated because you’ll have multiple things cooking at the same time. You can also just re-heat some items if you need to, but it’s nice to have an extra pair of hands to help if you have them. It’s also worthwhile to read through the instructions once or twice before starting just to have an idea of what’s coming.

โ€ขย  Cut the tofu into ยฝ – ยพ inch cubes, trying to cut them as equal-sized as possible. Lay the cubes on a doubled-over paper towel.
โ€ขย  Place another doubled-over paper towel on top of the tofu cubes, and then place a large cutting board or baking sheet on top of the paper towel. Lastly, place something heavy (like a large pot or cast-iron skillet) on the board/sheet to weigh it down, and let this sit for at least 30 minutes. This will help remove excess water from the tofu.
โ€ขย  While the tofu is being pressed, combine the rest of the dry Tofu ingredients in a bowl (do NOT add the oils!) and mix well. Set aside.
โ€ขย  In a separate bowl, combine all the Sauce ingredients and mix well so there are no lumps. Set aside.
โ€ขย  Now start on the Vegetables. In a large pan or wok, heat a few Tbsp. of olive oil over med-high heat and add the onions, carrots, and bell peppers. Sautรฉ these vegetables until the onions start to become translucent, stirring regularly.
โ€ขย  If your noodles need to be cooked, start boiling a large pot of water now.
โ€ขย  When the onions start to go translucent, add the garlic, mushrooms, and bok choy. Continue to sautรฉ until the bok choy is wilted, stirring regularly.
โ€ขย  While the vegetables are sautรฉing, start to heat the 4 Tbsp. of sesame and olive oils in a separate large pan or skillet over high heat.
โ€ขย  Take a few of the tofu cubes and roll them in the bowl with the flour mixture. Coat all the sides with the mixture and gently place the cubes into the sesame/olive oils. Continue until all the cubes have been floured and are in the oil (you may need to split this into 2 batches if your pan isn’t large enough). Fry the tofu until the bottom is lightly browned (6-8 or so minutes).
โ€ขย  When the vegetables are done (i.e., the bok choy is nicely wilted), add 3 Tbsp. of the Sauce and all of the scallions. Mix well and then remove the pan/wok from heat.
โ€ขย  When the bottom of the tofu has browned, flip the cubes over to start browning the other side. I personally have found the best way to do this without making a huge mess is to use 2 forks to flip.
โ€ขย  When the water for the noodles is ready, start cooking the noodles according to package instructions.
โ€ขย  When the tofu has again browned on the bottom, remove the cubes from the oil and place on a paper towel to capture any excess oil.
โ€ขย  When the noodles are done, drain and return to the pot. Add the Sauce and mix well.
โ€ขย  If your vegetables have been sitting for a while, you can turn the heat back on for just a minute to warm them up some.
โ€ขย  To serve, place some noodles on a plate or in a bowl, top with the veggies, and then place some tofu cubes on top.
